Cauliflower Edamame Hummus Tacos

TACO TUESDAY! If you love cauliflower + hummus + tacos you will not be disappointed with this new recipe! Lately I am obsessed with roasted cauliflower and love roasting it in the oven with a little olive oil and taco seasoning! It makes the cauliflower and all of your dishes so flavourful! I love adding this cauliflower to my tacos and to my rice and burrito bowls! YUM!


These tacos have a lot of beautiful colours happening! I love adding red cabbage to my recipes because they add such a nice colour to your dish! These tacos are super flavourful and a little spicy thanks to my jalapeño and edamame hummus! This hummus is a beautiful green colour and adds a lot of nice colour to these tacos as well! I added some diced avocado and some lime and cilantro to these tacos for some extra flavour!


Edamame Hummus Recipe

Ingredients

1 can chickpeas, rinsed and drained

1/3 cup avocado oil

2 limes, juiced

1 Tbsp tahini

2/3 tsp salt

2 cups fresh spinach

1 cup edamame beans

1/2 small jalapeño, fresh


Directions

1. Rinse and drain chickpeas and add to food processor.

2. Add avocado oil, lime juice, tahini, salt, spinach, edamame beans and jalapeño. Blend for 2-5 minutes until smooth.

3. If not smooth, add 1 Tbsp avocado oil and blend for another minute.

4. Repeat until desired consistency.

5. Taste. Add more salt or jalapeño as desired.

6. Place in bowl and set aside.


Cauliflower Edamame Hummus Tacos

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Serves: 2 (2 small tacos each)


Ingredients

1 small cauliflower

1 Tbsp olive oil

2 tsp smoked paprika

1 tsp cumin

1/2 tsp cayenne pepper

2 tsp Tex-Mex (or taco) seasoning

4 whole-grain tortillas

1 cup edamame hummus

1 avocado

2-3 cups roasted cauliflower

2 cups shredded red cabbage

1 lime

1/4 cup fresh cilantro

Directions

1. Preheat oven to 350 degrees.

2. Cut cauliflower into small pieces and wash. Place on towel and let dry for 5 minutes.

3. Place cauliflower in a large ziplock bag. Add oil to bag and shake until cauliflower is coated.

4. Add paprika, cumin, cayenne pepper and Tex-Mex (or taco seasoning) to bag and shake well.

5. Remove cauliflower from the bag and place on lined baking sheet.

6. Place in oven and cook for 12-13 minutes. Remove from oven and flip over cauliflower. Cook for another 12-13 minutes until cauliflower is tender and slightly browned.

7. Remove from oven and set aside.

8. Take 4 wraps and spread each with hummus.

9. Add 1/2 - 1 cup of roasted cauliflower to each wrap.

10. Peel skin off avocado and dice into small cubes. Place avocado cubes on each wrap.

11. Top each wrap with approximately 1/2 cup of shredded red cabbage and garnish with fresh cilantro and a lime wedge. Serve and enjoy!
